Elderberry wine
Elderberry wine is a type of wine made from elderberry (Sambucus sp.).[1] The berries to make the wine should be picked when fully ripe.[2]
Recipe
This is the recipe for elderberry wine:[3]
- Freeze the berries as this makes the juice to run more freely
- Put the berries in a fermenting bucket and crush.
- Whack in the sugar and pour over a liter of boiling water and stir until the sugar has fully dissolved.
- Syphon it into a demijohn leaving the lees behind. This process should be repeated 1-3 times.
- When the air-lock stops bubbling, the wine is ready.
